Summer brings with it a slew of health problems. Dehydration, loss of appetite and allergies are some ailments that can turn this season into an unhealthy one. But certain foods can help cool your body, without compromising on nutrition. “Maintain your body’s water level in the heat, not just by drinking fluids, but also choosing foods that contain a lot of water,” says nutritionist Mitalee Doshi. Here’s our guide to what you should pile your plates with this summer.<br />

Intestinal infections such as cholera and typhoid go around faster when the weather is warm. Eating curd increases the friendly bacteria in the intestines. “These bacteria promote digestion and boost immunity. Curd also contains vitamin B, which helps soothe ulcers, allergies and heat boils that tend to appear during summers,” says Doshi.<br />

Due to sweating, water and essential minerals are lost from the body, which in turn, makes you tired and sluggish. But certain drinks can work as energisers. “Coconut water, packed with simple sugars, electrolytes and minerals, replenishes hydration levels,” says Doshi. “Sugar cane juice is useful for those who work out. Since it contains only natural sugars, it cools the body and energises with a high quantity of carbohydrates.” A lemon and honey drink can also instantly replenish your body’s lost water.</div>

“Fruits like watermelon, lemon, sweet lime and orange should be consumed during the hot months as they have high water content,” says Sanjeev Kapoor, chef and director, Wonderchef. Doshi adds, “Fruits rehydrate the body and provide the essential vitamins and minerals to keep up the energy levels.”<br />
Light to digest, water-based vegetables are recommended for the summer. “Stock up on water-rich vegetables such as cucumber, carrots, tomatoes, spinach and bell peppers. They prevent urine from being acidic,” says Doshi. “Eating these foods may assist your body’s ability to release heat so that the hot weather doesn’t make you feel overheated or exhausted.”<br />

They may lead to constriction of blood vessels and decrease heat loss from the body. “Extremely cold foods and drinks are known to interfere with digestion and sweating, the body’s natural cooling mechanism,” explains Doshi.</div>

“Digestion of heavy foods depletes the levels of water further. The result is fatigue, poor concentration, light- headedness and decreased metabolism. Oil contains fat, which, on entering the body, produces a thermal effect and increases its temperature,” says Doshi. “Eating too much spicy food during summers also generates heat in the body,” says Kapoor.</div>

Kapoor advises to avoid high caffeine content as it dehydrates your body. Doshi adds, “Caffeine and alcohol both act as diuretics — substances that increase urination, which leads to a loss of excessive water from the body. Plus, with additives like sugar and other chemicals, they can increase your body’s temperature from within.”</div>

Drink three litres of water daily. Also, drink water before, during and after physical activity to offset the fluid your body loses through perspiration. Your diet should comprise soups, salads and fruits. </div>

Plan light meals during the day to keep you agile. Hygiene measures should be followed as summer brings water-borne diseases. Washing hands, eating fresh food and avoiding outside food is a must. </div>

After cooking and transferring food into the serving bowls, move them aside (to the dining table or side of the counter). Transfer soiled vessels from the countertop to the sink. Clean the stove, the blender, oil canister as it usually sits next to the stove, the tiles behind the stove, and the counter top. If you have used the microwave/over, wipe them out as well. Pay attention to areas around and under kitchen gadgets.</div>
<div class="body" style="margin-bottom: 20px; outline: none;">
Put washing liquid concentrate on heavily greasy vessels (kadai, tava, etc) and allow to soak. In the meanwhile, wash the lighter vessels and crockery with a sponge. A coarse scrubber may leave scratches on the glassware/non-stick vessels. Rinse well till water runs clear and there is no residual soap on the vessels. Now move to the soaking vessels. Scrub with warm water if necessary to remove the grease. Allow water to drain from the vessels. Wipe, dry and put away.</div>

Clean out the bins.</div>

Sweep and mop the floor, taking care to cover the areas behind the cylinder and under the refrigerator.</div>

This is a more thorough cleaning. This means inside-out cleaning of heavy equipment.</div>

<b style="outline: none;">The Fridge</b> Defrost and empty the fridge of all its contents. Remove the trays, including the ice-trays. Wipe the fridge inside out with a combination of water and white vinegar in equal proportion. Pay attention to the nooks and crannies, behind the rubber piping, handles… Wipe clean with fresh, soft cloth. Take care to organise your food in the refrigerator. Freshly cooked food should be on the topmost rack. The raw meat and fish should be stored at the bottom shelf so that it does not drip into the cooked food. This prevents cross-contamination. Change the water in the ice trays. Clean water-bottles well with warm water and a bottle brush. Pay attention to the caps. Dry well before refilling and putting them in.</div>
<div class="body" style="margin-bottom: 20px; outline: none;">
Check the foodstuff. Throw out anything that is date-expired/spoilt/can’t remember when you put it in. To tackle food odour in the fridge, take a small quantity of baking powder in a container and keep it inside. Alternatively, dilute a drop of peppermint essence/oil in water and dipping a cloth in it wipe the fridge dry. But be careful you don’t use too much of the essence as it is strong and could overpower other foodstuff you have in your fridge.</div>
<div class="body" style="margin-bottom: 20px; outline: none;">
<b style="outline: none;">Microwave</b> Clean the inside thoroughly with a cloth dipped in water/vinegar combination. Remove the glass tray and the ring and clean them too.</div>

<b style="outline: none;">Blender</b> Put a mixture of dishwashing liquid and warm water into the blender. Run the machine. This will take care of any food particles stuck beneath the blade. Throw out the water and run the machine again more than once with just warm water so that it takes out any residual soap.</div>

<b style="outline: none;">Coffee Maker</b> Mix vinegar and warm water in equal parts and run a brewing cycle. Repeat the cycle another couple of times with only warm water.</div>

<b style="outline: none;">Drainage</b> Most important! Clear the sink and clean with soap and water. Pour equal parts baking soda (not baking powder) and white vinegar into the sinkhole. Allow to stand. You will notice some foaming which means the cleaning is underway. After a few minutes pour boiling water to chase down the soda/vinegar. This will clean the drain pipe, remove any grease and kill bacteria.</div>

<b style="outline: none;">MONTHLY</b></div>

Once a month you have to clean the draw pulls, the tap heads, door handles, wall tiles, exhaust, cobwebs, window mesh, light fixtures and switches. All of the above can be cleaned with a combination of water and white vinegar. Be extra careful when you are wiping down electrical fixtures. If there is heavy grease, then use just vinegar. Stubborn stains can also be cleaned with baking powder. Use a toothbrush to reach the corners. Even if you use garbage bags for the bins make sure you clean the bins thoroughly once a week. Segregating kitchen waste is beneficial to health.</div>
<div class="body" style="margin-bottom: 20px; outline: none;">
Check the cupboards and vegetable tray before you set out to buy your monthly provisions and fresh produce. It is a good way to discover things you have put away and forgotten about. This is also an ideal time to bring down storage containers and wipe the shelves clean.</div>

The Kerala State Ice Manufacturers’ Association has called off its two-day old lockdown of ice plants that began on Thursday protesting against food safety authorities’ order of closure of 15 ice plants in Ernakulam and Thrissur districts.</div>

But for the 15 ordered to be closed, all the ice plants—which mainly served fishing industry—reopened late Friday afternoon. This followed the association’s talks with Health Minister V.S. Shivkumar and Joint Food Safety Commissioner K. Anilkumar.</div>

Food safety officials had found traces of formalin and ammonia in samples taken from 13 of the 15, and traces of ammonia in the other two. Officials said a part of the ice blocks found their way to cool-drink shops and fruit-juice vendors, thus posing huge health risks. The ice blocks were mainly used to increase the shelf life of fish, thus putting the health of a majority of Keralites at risk.</div>

Had the strike continued, the shortage of ice would have deeply hurt the fishing industry as ice is the main preservative used in the industry. It would also have hurt seafood exports.</div>

K. Uthaman, general secretary of the association, said that they were calling off the strike on the assurance that ice plants would not be ‘arbitrarily’ force-closed without giving them time to take corrective steps.</div>

They tell consumers of scientific studies that guarantee the superiority of
their product. But just what are these scientific studies and how are they
conducted? These are questions that require examination. </span></div>

<span lang="EN-GB">A scientific study is a method of testing a
hypothesis that constructs a test situation and then, using observation and
experiment, either proves or disproves the said hypothesis. So, if a food
supplement claims to make children grow taller, the study would involve a large
number of children, some of whom were given the supplement and others who were
given a placebo. Both sets would be observed over a period of time and their
heights measured. If the study could prove that the supplement on the whole
made the children on it grow faster than the children not on it, while
controlling for genetic and other factors that influence height, then the
makers of the supplement could use the study to make claims about their supplement’s
effect. </span></div>

<span lang="EN-GB">Now, there exist a vast number of
accredited studies in the fields of nutrition and health that help us gain a
deeper understanding of the complex relationship between our bodies and the
food we eat. These studies are conducted by researchers the world over, in a
rigorously scientific manner and their results have helped us gradually better
this understanding. On the other hand, there are also several studies whose
independence is dubious at best. Let us examine this in more detail:</span></div>

<span lang="EN-GB">Whenever an advertiser makes a claim based
upon a study, find out the name of the study they’re referring to. Was the
study done by a reputed institute? Was it published in an accredited
peer-reviewed journal? If it was, then it’s very likely legitimate, because these
studies have been scrutinised by other independent scientists and their
findings have been more-or-less validated. If it wasn’t, then you need to dig
further.</span></div>

the company making the claims in its ads is the one that funded the study, then
you may well be suspicious of it. While this in itself doesn’t mean the study
is incorrect, its independence is certainly questionable. </span></div>

<span lang="EN-GB">Additionally, researchers face a great deal
of pressure from the corporate world, which operates on a different schedule
than them. Time is money for a company, but good research often takes time.
This is especially true for research into nutrition where results and also side
effects aren’t immediately apparent. So examine the timeline of a study: how
long the subjects were under examination and how big the sampling of test
subjects was. The number of test subjects should be sufficiently large in order
to even out statistical errors. Think at least a few hundreds, and preferably
thousands. </span></div>

Facing the prospect of having to apply for licences afresh from the Centre under a new food safety and standards law and be regulated by the central foods regulator, the industry that counts among its members top companies like United Spirits, Radico Khaitan and Diageo India has dragged the central government and the regulator to court. While the liquor industry argues that alcoholic beverages form part of the state list under the Constitution and are regulated for purposes of taxation and standards by state excise laws, the central government has submitted to the court that it derives its power to regulate alcohol from the concurrent list which allows it to legislate on matters related to ‘adulteration of food stuff’. <br />
In a petition filed before the Bombay High Court, the alcohol industry claimed that the central government has committed a fundamental error in defining liquor as food under the new Food Safety and Standards Act (FSSA). This, the industry pleads, was the very reason the now-repealed Prevention of Food Adulteration Act (PFA) never applied to liquor industry. <br />
PFA was overridden by FSSA in 2011, which regulates the country’s food sector. <br />
The industry’s claim is being vehemently opposed by the central foods regulator, the Food Safety and Standards Authority of India, which argues that the liquor industry all along fully fell under the scope of PFA. The Centre also has strongly protested against any definition of food that excludes alcohol. “Barring drugs and water, our stand is that all that is consumed is food,” an official said. <br />
The only exemption in the category of liquor can be made for alcohol which is being produced for use in medicine and toiletries, he added. If the court rules that liquor is indeed food, alcohol companies would have to apply for fresh licences from the Centre. <br />
Liquor companies say regulation of alcoholic beverages – its production, possession, transport, sale and purchase – is strictly and exclusively the domain of state governments, a task they are already implementing effectively. By making an attempt to regulate alcoholic beverages, the Centre is encroaching on states’ jurisdiction, the liquor industry claims in its plea to courts, calling the move ‘illegal, arbitrary and unconstitutional’. <br />
Alcohol companies feel multiple regulations will stifle the industry. “Even the quality of alcoholic beverages, which the food regulator is trying to now regulate is currently being governed under State Excise Act and Rules framed by different states. It is almost impossible for the industry to conform to multiple overlapping laws being implemented by multiple authorities. We are juggling between at least three different sets of legislation –State Excise Act and Rules, Food Safety and Standards Act and Legal Metrology (Packaged Commodities) Rules now which is creating a lot of confusion in the industry,” said Lalit Khaitan, chairman and managing director, Radico Khitan. <br />

<tmp>THIRUVANANTHAPURAM: The state government will not show any leniency in the implementation of the Food Safety and Standard Act, said health minister <a href="http://timesofindia.indiatimes.com/topic/V-S-Sivakumar" style="color: #336797; text-decoration: none;">V S Sivakumar</a> here on Wednesday.<br />
Addressing a press conference, the minister emphasized that every food producer in the state, from street vendors to star hotels, would be strictly monitored and defaulters will be penalized.<br />
"By conducting more than 3,000 awareness programmes across the state since August 5, 2011, the food safety department has made the food businesses and establishments aware of the strict nature of the act," he said.<br />
"Those who violate the rules will be asked to close shop and only after proving their capacity to meet the standards will they be allowed to function again," the minister added. Sivakumar opined that the earlier food safety laws were lenient but under the new one, a defaulter could be imprisoned up to six years and slapped a fine of up to Rs 10 lakh, and no compromise would be made in its execution.<br />
In the past two days, food safety officials raided 271 hotels across the state. As many as 18 hotels were told to close down and 150 given improvement notices. "The drive will continue in the coming days," the minister said.<br />
When asked whether the department had necessary infrastructure and manpower required for the mass operation, Sivakumar said that if required, more officials would be recruited.<br />
"The department has labs to conduct sample checks at Thiruvananthapuram, Ernakulam, Kozhikode and Pathanamthitta.<br />
More labs will be established in all districts in the state, for which we have requested additional funds from the Centre,"he said.<br />
Meanwhile, the state had completed the registration process of 2,167 petty shop owners and have given licenses to 8,964 hotel and restaurant owners.<br />
"Several thousand shops are yet to avail them. We have extended the registration time for three more months on the request of hotels owners. However, this will not stop the department from taking action against the violators," Sivakumar said.<br />
He further said that a meeting of various state departments would be convened soon to bring coordination in the process.</tmp></div>

It claimed that of the 16 food brands that underwent scrutiny in its labs, all of them were found to contain more harmful elements as the brands publicly report.<br />
<br />
The brands tested included the likes of Maggi, Top Ramen, McDonald's, KFC and Haldiram’s. What the CSE claims is this – that these brands have either misreported or not reported the presence of contents like trans-fats (which causes coronary diseases and reduce the level of good cholesterol), salt (which effects a rise in blood pressure) and sugar (we all know what simple sugar can do!), and therefore these are harmful for the nation’s youth. Take for example the case of an accused.<br />
<br />
According to the National Institute of Nutrition (NIN), the maximum quantity of salt an individual can consume per day is less than 7 grams (5 grams as per WHO). As per CSE’s findings, the Rs.10 packet of Maggi noodles contains close to 4 grams of salt, and the company doesn’t even report this on the package. This, therefore, means that during the course of the day, a youngster (Maggi is especially loved by the young) isn’t informed that he/she should not consume more than 2 grams of salt. <br />
Take for instance another set of accused – Haldiram’s, PepsiCo’s Lays, Nissin Foods’ Top Ramen, and McDonald’s. I wouldn’t want to churn out numbers here proving CSE’s stance, but what is important to know is that each of these brands have been accused for delivering more trans fats than they are allowed or they report.<br />
<br />
As per WHO, the trans-fat intake limit for an adult ranges between 2.1 grams to 2.6 grams per day. However, the lab reports have proven that these multinational brands are selling products that contain more trans-fat than they should. Again, the claims made by CSE stand legible and in the interest of the nation’s health and youth.<br />
<br />
But the question really is – what has CSE done in all these years in the field of food safety to let us to believe that this time around, its findings will actually be able to force some of the nation’s biggest multinationals to take corrective steps? And can it convince the nation’s youth that besides reducing this matter of food hazard to a heated discussion on a news channel, CSE will perhaps even convince authorities to force the multinationals to hold collaborative testing with it?<br />
<br />
Remember the year 2003 when the CSE first reported high levels of pesticides in colas? That created a lot of buzz. I was in my final year of graduation then. For about a couple of months I was careful not to buy a bottle of carbonated liquid. As expected, by the end of that year, I had forgotten that Coke or Pepsi can harm me. Perhaps the whole of India had.<br />
<br />
In 2006 again, the labs at CSE spoke and revealed that despite its warnings three years back, the levels of pesticides in colas had not fallen. This time, I had passed out of a b-school and happily employed. Again, the buzz was created – the media elements went loud, known experts criticized the cola companies for not taking necessary action over the years and exposing their brand equity to dangerous winds, parents across the country again got careful about encouraging their children to have fresh fruit juices, and as for me, I again got careful about not drinking colas.<br />
<br />
Twice in a matter of four years, PepsiCo and Coca-Cola had been criticized, slammed, reported against, and their brands stood the chance of being boycotted from the Indian market. Today, I am a happy consumer of colas and I not just love the recent ‘Change the Game’ ad of PepsiCo featuring Ranbir Kapoor, but I think the social campaign of Coca-Cola is also very sweet.<br />
<br />
So will this recent allegation by CSE make any difference to the ethos of the accused multinational companies? Nothing much will change, nothing much needs to change. In terms of ethics, the right strategy on the part of the companies (in case they do not want to participate in a collaborative test with CSE) should be to reveal the right levels of contents on the package. It wouldn’t be right for them to stick to their claims that their products have permissible levels of dangerous elements (as allowed by the Food Safety and Standards Authority of India, FSSAI). But the question is – in the past decade, if two of CSE lab reports couldn’t affect the cola-vending machines of two multinationals, what will happen with one report involving about 6 multinationals?<br />
<br />
At the end of the day, the companies will deliver what they will till the time the consumer is the king. And they should, but ethically. [Isn’t poison and sleeping pills sold in the market?] Remember, when you’re ordering a bottle of Coca-Cola, you know it’s unhealthy. And given the rate at which India is getting educated, am pretty sure, every college-goer knows that a burger or a packet of chips isn’t healthy food either, irrespective of the claims made in TV commercials or by the healthy brand ambassadors!<br />
<br />
For the accused MNCs, it’s time they turn to ethical advertising and strategy of selling their products. This way, neither will their noodles or wafer lovers run away and nor will their revenues take a dip! When was the last time you read the content of that chip or noodle packet, or asked for the chemical content of that burger or cola? A copy of this information has been sent to the Central Board of Excise and Customs, department of revenue, ministry of finance, and National Institute of Smart Governance (NISG), the FSSAI has revealed on its website recently.<br />
<br />
Speaking to FnB News, Shailesh B Nimbalkar, representative of FSSAI in Mumbai, stated, “The online payment gateway system had been operationalised on Dec 28, 2011, and the payment towards lab analysis by the food importers would be effective from this month.”<br />
<br />
He explained the process of registration, thus; the importers should fill a form and attach all the necessary documents required for the food sample processing. Following which, a consent letter would be sent to them after review of the documents by the FSSAI through the officers’ online account. After which, the importers would be eligible for applying. “A user name and a password would then be provided to them,” Nimbalkar informed. He added that the importers could pay through online henceforth and check their status 24/7, once they submit the details of the samples.<br />
<br />
The FSSAI representative said that the system was first introduced in the month of September and in its initial stages had to undergo a lot of difficulties such as necessity for training, lack of attendance of the importers for the same and complaints regarding the software.<br />
<br />
In view of these glitches, FSSAI decided to provide compulsory training to all the food importers and more than 100 importers underwent this training under three officers from Mumbai who were specially assigned for the task, stated Nimbalkar on a concluding note.<o:p></o:p></span></div><br />
